I am an American Girl, born and raised in an "old-school" family (though I am quite open minded and liberal)...
I just started seeing a 30 year old guy from Germany. When we are together, we are very connected, as if we read each other's minds and finish each other's thoughts... and real "giddy," like we are still in high school! However, I am very confused about German dating norms. I'm use to waiting for the guy to call me, the guy to ask me out... making the first move... moderating how much I am suppose to let him know I am in to him (as if holding back is a virtue).... etc, etc.
I am really confused about what he expects from me (based on his culture)... and this "respect" thing that he speaks of?.. I'm very worried that I might ruin it all by being too American-minded when it comes to the dating "game."
Can anybody explain to me the differences between relationships in the US and Germany... or tell me something about dating in Germany, in general?

I'd say germany is not as conservative, so he probably doesn't expect you to wait for him to call. As far as I've experienced it, dating is not really formalized, it rather evolves from friendship, so you shouldn't look for dating norms.
For example, in two thirds of my last relationships it was the girl that made the first move (I am german), and they all evolved from being friends first, we never dated in a formal way.
I don't know what he means by "respect" without knowing the context.You probably should ask him in a casual way.Try to turn a conversation towards what he expects of a future relationship (in a casual way, like you're just chatting), that should give you a hint; if he wants you to be his future girlfriend, he'll react to it by describing his future gf the way you are.

In the U.S. you tend to push to much and go to fast. Just slow down and give him some space
